In your kit you will have for every 2 people…
1. 2 x Half Lobster
2. 2 x Potatoes ready to roast
3. 1 x Caperberry Salad
4. 1 x Fennel Salad
5. 1 x Aioli
6. 1 x Salsa Verde
7. 1 x Wild Garlic Butter

Getting Organised…
Begin with a clear surface, I always like to get things ‘oven ready’ as they say before starting any cooking. Spread out your components and arrange into groups that resemble each course around an hour before you want to start cooking to ensure everything comes up to room temperature, this is called ‘tempering’ and helps with the even cooking of your food.
Pre Heat Oven to 220degrees C and your grill on high. If you don’t have a grill your Lobster will cook fine in the oven.
Lay your Lobster halves onto a roasting tray, season with Salt and a little oil.
Spread you Potatoes onto another roasting tray, these are already seasoned.
Place your Potatoes into the oven with a 15 minute timer.
Put your salads and sauces in the centre of the table in bowls ready to share.
Pop your Lobster under the grill for 5 minutes, pop the garlic butter on top and put back under for another 5 or until the blue shell has more or less turned to pink.
Serve!
